Kale really is one of the healthiest foods out there, and it's fast becoming one of the most popular vegetables as well. It's being touted as “the new beef” by many health food gurus, and as far as leafy greens go, it's just aces. In addition to being a fat fighter, it's incredibly versatile – you can eat it raw, boil it down like collard greens, or even make juice out of it. It has lots of fiber, calcium, and vitamin A, along with a wealth of other essential nutrients, minerals, and vegetables.
